Food Porn & Lots of Running


Yesterday was pretty amazing. Amidst all of the sadness surrounding the Boston Marathon the running community really came together and showed that we are not so easily defeated. I started my day a little differently than normal and ended up having an amazing day.

Breakfast

I switched up breakfast yesterday and made pancakes! I typically only make pancakes on the weekend so this was a fabulous Tuesday treat. Plus they came out AMAZING.photo 1(2)The pancakes were made out of a mix of 1 smashed banana, 2 eggs, some flax meal, and a dash of coconut flour. That delicious sauce on top is a mix of one spoonful of honey and one spoonful of almond butter. I popped it in the microwave for 20 seconds and mixed it all up. photo 2(1)Those ingredients made SEVEN mini pancakes. I was in heaven. The whole thing tasted and felt indulgent and kept me full through a work out a few hours later.

Work Out #1

Yes this does mean I worked out twice yesterday. Booya. Over lunch the boy and I decided to hop on the treadmill for 5 minutes to warm up. We ended up getting chatty and enjoying the slow jog so we hung out on the machines for a little longer. At about 20 minutes I made the game time decision to run 2.62 miles in honor of Boston. Adorably sentimental don’t you think? I wish the idea was my own but I saw it online. I was also wearing a race t-shirt! After the run I did 30 pushups and 60 sits up.

Lunch

I didn’t take a picture of lunch because frankly it wasn’t pretty. It was delicious though and I think I just came up with a brilliant idea for salads.

So when I went grocery shopping this week I fudged up and didn’t buy any meat for lunches. Woops. Knowing I would need some sort of substance in a green salad I brought in one of the free hummus samples I had left over from the Cherry Blossom 10 Miler. When it came time for lunch I dumped the hummus into the salad and added a bit of dressing (EVOO, lemon juice, apple cider vinegar, spices). Then I put the lid back on the salad and shook it until the hummus and the dressing mixed into an incredibly creamy AND garlicy dressing. Oh sweet heaven it was amazing.

Work Out #2

I got home a little after 4 and told myself that if I was done with the cleaning I needed to do by 6 then there was no reason not to hop in on a group run at 6:30. It was fricken gorgeous out. I wanted to wear a race shirt but I also wanted to give my chest and shoulders a chance to get a little sunshine on them. I don’t think I could have picked a more obnoxious outfit and I loved it. I have complained before about running in short shorts and chaffing, if you noticed I am indeed wearing shorts and I am happy to report my legs were happy as ever yesterday. BodyGlide is amazing and I’m kind of in love now. I tan freakishly fast (like I rock a tan line from my Garmin 24/7) so wearing spandex that hit mid thigh all summer just isn’t an option. Plus my spandex shorts are all black and neon green is WAY better. photo 4(1)The run was a 50 minute out and back on the Mt.Vernon trail, we ended up doing 5 1/2 miles, bringing my total for the day up to 8.12 miles! I ran with a girl who I found out has a blog too and a guy who is training for a triathlon! Christy oddly enough not only was a fellow running blogger she also lives in my apartment building, how fun is that? She has run FIVE marathons and is signed up for the MCM2013! We were both pretty excited about having a fellow runner so close by and said we would have to meet up more for running. I think once June rolls around and I change my work outs / work routine to do long runs in the AM we will try to tackle a few together. We are both shooting for a sub 4 marathon. Her current PR is 4:01, so close!! I obviously did a little blog stalking and we both ran the RNR DC race and the Cherry Blossom race, we finished within 10 seconds of each other, small world!

Dinner

When I got home it was already 7:45 so cooking just wasn’t in the cards. For some one who normally eats dinner by 5:30 / 6 there was no way I was going to make a full meal and eat after 8pm. I whipped out the Cuisinart and starting filling it with anything I could find.photo 5(1)I ended up with 3/4 a cup vanilla almond milk, 1 frozen banana, some ice cubes, a little bit of unsweetened dark cocoa powder, cinnamon, almond butter, and flax meal. It was helladelicious.

Another meal that was delicious was dinner from Tuesday night. I splurged and bought ground bison instead of the cheaper turkey / beef counter part and it was soooo yummy. I also went rogue and bought a spicy Gouda cheese to top 2 of the 4 burgers that would come out of the pound of meat. I know, it’s not paleo, shoot me.photo 1(4)I ate the burger with sauteed onions and mushrooms with some Parmesan cheese and sweet potato fries. Obviously a separate dish was necessary for ketchup. I am an addict and I don’t want to change. The view from my new bedroom is so nice! I love that my desk faces a window instead of a wall. photo 3(3)If you were wondering, yes, that is a blue solo cup that I was drinking water out of. When Amelia was moving out a sleeve of solo cups appeared and I discovered that they hold a lot more water than my glasses, so out of convenience I may have been using one all week. Don’t judge me. All in all its been a good day or two of noms so far this week!

  1. THOSE pancakes!!! yum.. I know exactly what I am having for breaky today 🙂 After I go run in about 20. Everything looks so good.. I used to eat a bison a lot growing up because our friends had a bison farm, but now I haven’t had it in ages. Drooling over those burgers right now. Loving the view!!

    • I’m jealous that you are still at the early stage in your day! It is already 9:30 hear and that breakfast was eaten around 5:30 : ( I’ve already eaten my first snack of the day! Good luck on your run!

  2. I love your dressing idea! Hummus is great on top of salads but never thought to mix it around like that! Yummm. Your new view is awesome, I love being able to see some trees outside of an apartment window too 🙂

    • Greenery makes me ridiculously happy, for the last 2 years my window has been out over the pool, which is fine but I prefer the green, building, and the potomac! (it is there I promise, didn’t catch it in this picture!)

    That bison sounds amazing. Did you have to go to a special grocery store for it?

    • Nope! The grocery store that I go to is Harris Teeter, I know that Wegmans and Wholefoods also have it. I haven’t looked elsewhere. It is typically $7.99 for a 1 lb package. I wish that the store carried bison steaks, now those are good eats!

  4. Window facing desks are my FAVORITE! I had that when I lived at home with my parents and it was so relaxing.

    How in the world do you eat at 5pm? Do you have snacks before bed? I wait and wait and wait as late as I can every night to eat dinner so that I have minimal snacking afterward, and it is very hard for me not to go to bed hungry. i’m sure I’ve complained about it on the blog before. That burger plate looked DELICIOUS!

    • My meals typically end up like this:

      6am Breakfast
      10am Fruit or something
      (work out happens sometime in here)
      1pm Lunch
      5pm Dinner
      8pm Fruit / bananayo / or something else / nothing
      10pm Bedtime : )

      I am much more of an early morning eater, I have been known to polish off my lunch at 10am haha

  5. The almond butter sauce on those pancakes looks incredible. I love the combo of nut butter and honey! I ran with a running group when I moved to a new city a few times and it was fun meeting fellow runners, but I didn’t like how there was a set time and day for when I would run since I like to just do it when I feel like.

    • I totally agree!! I joined this running group over a year ago and this is the first run I’ve gone to haha I always see them but am like meh I don’t like running at night. It just lined up well yesterday!

  6. So jealous of all your running and awesome meals yesterday! Totally cursing my super long work day and wishing I could’ve squeezed in a little running. Also really wish I could workout on my lunch break! Must be awesome.

  7. HOOKAY- first off, your view is AMAZINGGGGG. Oh my, I need to visit. I stare out at a bush. And then the driveway. And lots of birds usually run into my window and it freaks the flip out of me.

    I have never met a blogger randomally but I have ran in groups of ppl I didn’t know. The first time is always a little scary but then after you get talking it is like ‘oh my, why didnt i know this person before??? im a hermit!’

    I ran 8…. or was it 10? Let’s just say 9 and call it good. You did a double workout—- beast mode! Love it. I need to eat something good…. I have been drinking a lot of wine (and by a lot I mean like 2 glasses, that is a lot for me) and eating, like bread. With cheese. I should probably stop being a beggar.

    I blame this on the fact that my main squeeze was out of town and so I was like a sad, single introverted girl that didn’t want to eat with anyone. He is home now— dinner dateeeeeeeee !!!!

    I only make pancakes on the weekends too but get excited when I have leftovers to eat during the week. Fresh pancakes on a Tuesday….what a treat!

  12. That dinner looks amazing. I’ve only tried a bison burger once and that was almost 10 years ago (dang apparently I’m old).

    The first time I ran with a new running group I was so nervous, but it was great!

  13. You need to come be a chef at my house. Love those pancakes- look much better than my breakfast this morning, and LOVE Body Glide. You can’t risk nasty tan lines.
