A day in the life


I mentioned in my last post that my scale and I were not seeing eye to eye so I succumbed to calorie counting yesterday, wooo. Gross. The game plan is to share in photos what a 1200 calorie day looks like. I tend to stick to 1200 so I don’t feel bad drinking wine at night : ) Plus I went for a 7 mile run yesterday and burned 840 calories sooo really the wine is just an after thought, priorities people, priorities. I am a morning eater for sure and live on the idea of “Eat breakfast like a king, lunch like a prince and dinner like a pauper” so I tend to eat the majority of my food at breakfast and then again around 10am. Lunch is never a ton but I always have a snack at 2 because I typically work out by 4. Then dinner is around 6 or 7.

Breakfast:
2 eggs
1 oz soy milk
1 slice of Kraft 2% American Cheese
1/4 cup chopped red onion
1/4 med green bell pepper
1/3 cup Jimmy Dean Turkey Hearty Sausage Crumbles
1/3 can mushrooms (Don’t judge, I use the fresh for salads!!)
1/2 stalk of chopped green onion
It’s all greek to me seasoning (milford spice)
Habanero sea salt
1 slice of Wegman’s pumpernickel bread
1/2 tablespoon Granite Heights blueberry cinnamon jam (OMG AMAZING)
Damage: 345 cal / 16g fat / 23g carb / 29g protein / 3g fiber

AM Snack:
1 small nectarine
Arnold Whole Flax & Fiber Thin
1/2 tablespoon Granite Height blueberry cinnamon jam (I am in love)
Damage: 210 cal / 16g fat / 49g carb / 6g protein / 7g fiber

Lunch:
Salad
2 cups Organic Baby Spring Mix (mesclun greens)
1/2 roma tomato
1/2 green bell pepper
2 oz reduced sodium boiled ham (yes I did weight it)
1/4 cucumber, with peel
1/4 small avocado
1 ear of corn on the cob
1/2 cup fresh mushrooms
Dressing
1/4 cup cabernet wine vinegar
1 tablespoon spicy brown mustard
few shakes of it’s all greek to me seasoning
Damage: 222 cal / 6g fat / 28g carb / 15g protein / 8g fiber

PM Snack:
1 medium red delicious apple
Damage: 80 cal / 0g fat / 22g carb / 0g protein / 5g protein

Dinner:
4oz lean ground turkey
1/2 cups marinara
4oz NoOodle Shirataki Noodles
1/2 package of frozen broccoli
1 slice of Wegman’s pumpernickel bread
1/4 tablespoon smart balance
1/4 ounce manchego cheese
1 stalk of green onion
healthy serving of tuscan seasoning
lots of oregano
lots of basil
red pepper flakes
Damage: 371 cal / 15g fat / 33g carb / 33g protein / 10g fiber
*Probably less because I didn’t end up finishing dinner, I made sure to eat all of my meatballs though!

Mix together the turkey, green onions and your flavor choice. I did an awesome tuscan seasoning blend that I have. The turkey package was 20 ounces and I ended up making 38 meatballs. Which is about 1/2 an ounce each, I did drop one on the floor though : ( It is not the end of the world because I will be stuck eating this meal forever. Throw meatballs in a large pan with a little canola oil and cook until all the pink is gone!

Funny story: I mentioned earlier that I got a box of 30 of these NoOodle goodies. Well I had them in the box they came in in a big walk in closet I have in my living room. The door was accidentally left open to this closet. Well I live with 2 cats… they attacked! They punctured 3 of the bags of NoOodles so I put those three in some tupperware in the fridge and made a massive feast because I didn’t know how long they would last in the watery grossness they are packed in. So thank you kitties, I will be eating red sauce and meatballs all week now!

For the garlic toast I put the bread in the toaster while the oven broiler got going. Once the bread was toasted I put a little bit of smart balance, garlic powder and shredded manchego cheese. Popped it under the broiler for a few minutes and done!

Over all damage for the day:
1225 cal / 39g fat / 155 carb / 84 protein / 34 fiber
Goals:
1200-1500 / 27-60 / 135-252 / 60-136 / 25-35

AKA good day! I did have a healthy amount of wine but like I said… doesn’t count : )

  1. I have such a hard time having light dinners! It NEVER FAILS if I eat a healthy and light dinner, I am starving before bed and can’t fall asleep. Such a problem 😦

    • You have to tries these noodle! The brand doesn’t matter but seriously I set out with a beast plate and didn’t get close to finishing and trust me I’m always a member of the clean plate club haha
