After my exhilarating run yesterday and finding a 25% off coupon for Sports Authority AND a $40 gift certificate to Best Buy I decided to start running again. By start running again I mean buying myself new shoes, an arm band, and head phones! My Mizunos were ruined by the last tough mudder, my head phones were lost 2 weeks ago, and my arm band is old and my iPhone gets soaked when I sweat. Look at my goodies:
Now to a little food and cat tales : ) I am still working on finishing up all the delicious chicken I roasted this weekend so tonights dinner was based around the chicken and extra vegetables I purchased for the soup I made!
Lavender chicken, sweet potato fries, and sautéed kale with garlic and onion. For the sweet potato fries I took half a potato and tossed it with EVOO, smoked paprika, and seasoned salt. They went in the oven for 10 minutes @ 425 degrees. After 10 minutes flip over the fries and cook for another 8 minutes. To reheat the chicken I added it into the oven with the fries right after I flipped the fries. Now onto the kale, I boiled the kale for about 5 or 6 minutes, meanwhile I sautéed the onions and garlic with some salt and pepper. Once the kale was wilted I added it to the pan and tossed in some extra seasoning. And voila! Dinner is served. It was delicious!
