I finally got around to making these so I have pictures! My grocery store didn’t have rice paper so I ended up using soy paper wraps. Also for the pictures you can see I used shrimp, rice noodle, spinach and cucumber. So be creative and put whatever you want in them!
Rice Paper Rolls – pick and choose or add your own ingredients:
Dried Rice Vermicelli Noodles
Any kind of asian noodle you so choose
Tofu/shrimp/whatever protein you choose or none!
Soak rice noodles in boiling water for 3 minutes. Shred or slice your veggies. Soak your rice paper in warm water for about 15 seconds. Lay the rice paper out and lay the contents of your roll in the lower edge of the rice paper. Fold the bottom edge of the rice paper over the filling. Fold in the side edges and roll up to form the roll!These go great with peanut sauces or sweet and sour. Go ahead and pick your favorite! Also feel free to make any sort of “dressing” for the rice noodles and filling. Rice vinegar and garlic is a quick and easy go to to toss the veggies and rice noodles in.For this batch we made a teriyaki / soy dipping sauce. Just mix teriyaki and soy together and it is wonderful! I have made these on multiple occasions and here is what they look like with rice paper, I would recommend rice paper over soy if you can find it at your grocery store!
