I have a soccer game Tuesday (Valentine’s day) so we decided to celebrate early this year! My boyfriend LOVES chinese beef and broccoli so I decide to recreate it in a much more healthy fashion! Enjoy : )
Ingredients:
2 Ribeye Steaks
1 Head of Fresh Broccoli
2/3 cup of Marsala Wine
2 Cups Beef Broth
Minced Garlic
Rosemary (or your favorite herb)
2 tsp corn starch
1 TBLS butter / margarine
Salt, Pepper & Crushed Red Pepper
In a medium hot skillet place salt & peppered steaks. Cook about 2 minutes a side. Then place in a 375 degree oven for 4 minutes a side. Also get a pot going with boiling water for the broccoli.
Meanwhile, once steak has been moved to the oven, in the same pan add butter, ~2 tsp minced garlic and some crushed red pepper. Let melt for a minute or two. (If you are an onion / mushroom person I would also recommend adding either / or at this stage and cooking them down to perfection!). Next add in the 2/3 cusp of Marsala or whatever red you have on hand! Let reduce by half. Next add in beef broth and rosemary, or whatever herb you so choose, again let reduce by half.
While mix is reducing check on water. It should be boiling by now. Salt the water and throw in broccoli for about 5 minutes.
Once the steak is done in the oven let rest for 5 minutes and slice into thin pieces.
In a small bowl mix cornstarch and 2 TBLS of broth together. Once mix in pan has reduced add in corn starch and bring to a boil mixing. Add in drained broccoli and beef slices. Leave in just long enough to ensure everything is mixed and warm and serve!
I personally love onions and mushrooms so I would have included them but the boy is not a fan of either so we did with out! Still came out delicious!
