Burrito Bowl Omelet:
I went to this great burrito place on Saturday and got a burrito bowl. It was just beans, chicken, veggies and some homemade hot sauce. Well I didn’t finish the whole thing and was at a loss what to do with it. And brilliance swept over me and this bad boy came to life. I heated up the left overs in the microwave. In a small pan I added a half of a cup of egg whites. I flipped it once and then added in the goodies and folded it over. I served it with some avocado to enjoy with the omelet! This was awesome. Hands down the best wat to repurpose a burrito / bowl / whatever. I actually read in a magazine about doing this with left over pizza. So scrapping off the toppings and adding them to an omelet. I hope some one gives this a try so they can understand why I am so excited : )
very funny responses. some dip shit alautcly takes the purist stance on his burrito? burrito are themselves a fusion cuisine a cross between a (traditional) mexican quesadilla and a taco. created by californian’s to satiate the large american appetite. and for the record, there are numerous healthful alternative tortillas to be found all over mexico. chile, black bean, and yes, even spinach.it sure would be nice if americans would understand that mexicans are not just a bunch of people who eat in dirty, uninspired taquerias every day/night. it’s a progressive country with a massively evolving cuisine.
I make “tortillas” with egg whites ALL the time! Season up the egg whites with cilantro, pepper, paprika & parsley and it seriously tastes like BREAD!!! 🙂
I need to start cooking with cilantro more! Once I start growing herbs it will definitely be on the top of my list!
