Broc, Chicken & Cheddar Bake
About 2 cups of broccoli
1oz extra sharp cheddar cheese
3-4oz of chicken
1/2 cup of chicken broth
1 tbsp of flour
Some red onion
Splash of EVOO
Splash of white wine
Little bit of multi grain bread crumbs
Preheat oven to 400 degrees.
To start bring to boil some salted water. Cook broccoli for 3ish minutes, strain and dump in an ice bath to stop cooking. Remove from the ice and set aside.
In an oven safe pan drizzle a bit of EVOO and cook the chicken, season with salt and pepper.
Once the chicken is done remove it from the pan, dice up and set it aside. Add in onions and cook until slightly brown.
Throw in the garlic and some white wine to deglaze the pan. Allow to reduce until almost gone. Turn off the stove.
Add in the chicken and broccoli to the pan.
In a small bowl mix chicken broth, parsley, half the cheese and the flour. Once it is mixed pour in the pan spreading it around evenly.
Mix the rest of the cheese with the bread crumbs and sprinkle on top.
Bake for 10-15 minutes (I did for 10).
