Breakfast of Champions

Ingredients:

1 Thomas English Muffin – Light
2 Large Eggs
Seasoned Salt
Non Stick Spray
Avocado

Put your english muffin in the toaster. Meanwhile in a non stick pan over medium/high – spray a bit of non stick spray, just to be safe – crack and drop your eggs. Sprinkle with a bit of seasoned salt. Cook until the whites are opaque and the outsides begin to lift away from pan – about 2 minutes? For over easy flip and turn off the pan. Let cook for about another minute or so. While this is finishing take your toasted english muffin and with a knife scoop some avocado onto the muffin. Since it is warm the avocado should almost melt like butter. Add an egg on top of each half and voila! I’m seriously addicted to this, sooooo good!
