Banana Bread

3 over ripe bananas
1/2 cup sugar (or your favorite no cal sweetener)
2 eggs (can sub out for egg whites as well)
1ish+ single serve unsweetened apple sauce (a wee more apple sauce never hurt any one)
1/2  cup all purpose white flour
1 1/2 cup whole wheat flour
1 tsp salt
1 tsp baking soda
2 tsp vanilla
1 tsp cinnamon
1/2 cup of chopped walnuts

Mash the bananas in a bowl. Add in sugar and keep mixing. Next add in the eggs and vanilla and mix until nice and liquidy. Mix in the nuts,  and add in the dry indigents and mix until everything is incorporated. I like to cut up half a banana into chunks to make ‘banana bombs’ in my bread, I dare you to try it, it’s simply fantastic (that brings the banana total to 3.5)! Bake at 325 F for an hour / hour and a half, or until tooth pick comes out clean.
