12 baby bella mushrooms – if you are lucky and get to pick these out in the bulk section go for the bigger ones
1/2 red onion, chopped
1/2 summer squash, chopped
3 small sausage, remove the case
toasted walnuts
salt, pepper, garlic powder
Preheat oven to 350F. With a paper towel clean the mushrooms of all dirt. Pull out the stems and set aside. Place mushrooms on a oven safe pan and spray with nonstick spray. In a medium saute pan add sausage and red onion. Cook until the sausage looks almost done and the onions start to turn golden, add in the chopped mushroom and summer squash. Add a bit of garlic powder, salt, and pepper. The sausage I used was delicious on its own so I didn’t need to season this much. If you get a good sausage (read the label!! go for a label that is just meat and seasoning, no crazy words that end it xtrose) then you won’t need to add much more in the world of seasoning! Once everything is cooked add to a small bowl with a little bit of egg beaters, or an egg if you don’t have beater handy! Mix and pile high in the mushrooms! Bake at 350F for 18 minutes. Enjoy!
