Egg-cellent Breakfast


Holy smokes I’m cooking again! As you saw earlier in the week I was reduced to just eating eggs for lunch, sigh. Well in hopes to finally use up the millions of eggs in my fridge and to make breakfast super speedy I made a big ole egg bake. I’ve made variations of this before and love the results. Basically this is a quiche but with out anything fancy.

  • 8 eggs
  • 2 pizza veggie burgers (mine were from TJ)
  • 1 can of tomatoes, your choice, mine was a mix of tomatoes and peppers
  • 3/4 a package of slice baby bella mushrooms
  • giant gand ful of arugula
  • 2 laughing cow cheese light mozzarella sun-dried tomato and basil

Preheat oven to 375F. In a oven safe pan / pot spray with non stick and throw everything but the cheese in and mix. Cut up the cheese and spread out on top. Bake for 45 minutes. Serves 4. I did up this recipe online to find the nutrition because I was curious, the stats are: 255 calories / 13g fat / 12g carb / 21g protein. Minus the cheese that is a holy paleo style nutrition break down. ITS DELICIOUS. eggcellentAnother fun meal I made this week starred corn on the cob and sweet potatoes! The pork is just a pork loin that went in the oven for 20 min per pound at 375F (aka with the egg bake). Nothing fancy. The sweet potatoes were the star of this dish, I sliced up a few slices of a GIANT tot, covered them in water and microwaved for 5 minutes. Then I drained the water, added in some butter, hot sauce, and started to cut it up. I would have thrown it in a food processor but mine convenienetly blew up and I couldn’t find a masher. cornLet’s see, last on the docket is my longest work out session to date! I did 60 minutes on the bike and covered 11.5 miles! As a runner I feel like working for 60 minutes and only burning 350 calories is nuts. I miss the 500 – 1000 calorie burning work out sessions. Oh and lastly my poor knee. Sasha was SO JAZZED to see me that she decided to hop up and say hello. We A) don’t advocate jumping on people, B) I’m not super stable, and C) Daddy needs to get the babes nails clipped. I guess Sasha was just trying to let me know that my knee was just looking TOO good that she needed to bloody it up, and if you were wondering, why yes, that is the knee that was operated on three weeks ago. She is lucky she is so cute.leg

Q: Have you ever had laughing cow cheese? What are your thoughts? – this was my first time, I think its alright, the consistency is a little weird to me
Q: Pet owners – how often do you brush / clip your pets nails? – I would say Jax only get hers done 2x a year, I’m a bad mama, she gets brushed all the time though. I actually lost my brush and the new one should be here any day now!

  2. I lovedddd laughing cow cheese. I would eat that shit all the time with wheat thins hahaha. AHH I just got a nasty scratch from one of my cats (on accident) but it HURTS!!! I don’t even clip my kitties nails, but if I take them to the groomer they file them down. Awesome job making those mealsssss!! YUMMOO!

  5. That breakfast bake looks delicious. I eat eggs for breakfast, lunch and dinner. They are the best. I’ve never made batch breakfast before, but it looks like I need to start!

    • I cooked myself eggs every morning for breakfast since September! I have only done a few bakes but it makes having a more interesting breakfast so quick and easy. Plus if you aren’t in the mood for something warm it can be eaten cold and it’s still yummy!

  6. Oh no Sasha! Haha. Logan jumps on us once in awhile too when he gets over excited. Glad that everything’s ok though and you’re able to hop on the bike for a whole hour! Amazing!

  7. Oh that egg brekkie does look excellent! I have used veggie burgers in eggs before but never the pizza ones. When I have to make a big batch of breakfast I go with crockpot porridge or baked banana oatmeal. I love having leftovers for breakfast!

  8. waahoooo for real eats! Eggs look so ballin’ and I wish I had some waiting for me for breaky tomorrow morning! Gah, that scratch looks like a bad one, and on the surgery knee too – cringed a little when I read/saw the pick because errmmm OW?!?!?! Way to rock dem workouts though, heck yes!!!!!!

  9. LAUGHING COW CHEESE = DA BEST. I actually would consider giving this out as a wedding favor, with little crackers, for each guest. What do you think? So much better than a tiny chocolate. Actually chocolate is good to, so maybe I’ll do all of it.

    Um… please make me this egg dish. It looks yummy. I would add some peppers to it… and eat it between toast. YUMMMMAH.

    • Oh I like your style. I’ll send it to you in a refrigerated container, we can pretend it is a wedding gift…

      And YES to the peppers, I was just doing a clean out of what was in the fridge, I had other plans for my peppers : )
