I had a hot date last night with my roomate to Trader Joes. I rarely go but she talked it up on Thursday and figured why not. My biggest gripe with TJs is that they don’t have a meat department, this one sort of did though. Not a butcher or anything but there was chicken, pork, and steaks available. Their produce department was really well priced as well, I was impressed! I bought a bunch of wine and also some fun pantry items! After shopping I ran a quick 2 miles and showered up to be ready for the final potential roommate. She ended up running a little late so I didn’t get around to eating dinner until 8:30. At that point I didn’t want to eat anything big so I had a delicious mini dinner of brie, quinoa and black bean chips, and salsa! It was perfect!
When I don’t eat big meals for dinner I typically wake up famished and today was no different that usual. I grabbed all the vegetables available from the fridge and set out to make the boy and I some delicious grub. Eggs with a hash made of sweet potatoes, onions, broccoli, salt, onion powder, rosemary, and garlic. I cooked everything in a deep pan with a lid until the potatoes were soft. I had my eggs over easy and he had his scrambled. It was delicious.

That hash looks amazing. Broccoli and sweet potato…amazing! I had to stop buying the black bean quinoa chips because I would eat them ALL. Instead this week I bought TJ’s cookie butter. Yikes…that is dangerous stuff! Have a great weekend!
I saw that! I know better than to buy it though! I did get a new jar of sunflower seed butter, that stuff is so good!
