Long Run #1 & Sunday Crock Potting


I had been psyching myself up all week for this 10 mile run today. Well I did it. The weather was supposed to be 70 and sunny but ended up being about 50, foggy, and misty all day! I started the day with a trip to my local Harris Teeter, I brought an AMRAP Refuel Bar with me as a quick breakfast because I had no food in the house. (My AMRAP Refuel Bar Giveaway ends at midnight tonight so if you have not had the chance to enter yet, time is ticking!!) I stocked up for a crock pot adventure at the grocery store and headed home. I chopped, seasoning, turned the crock pot to low, and headed out on my run.IMG_4481The run was a million times better than I had expected. I ran along the Potomac river for the entire run, I went 4.2 miles south, turned around, went to the start spot, ran an extra mile north, and finally turned around back to the start and finished with an extra 1/2 mile walk back to my apartment. I was doing great up until the last half mile or so, I was just mentally exhausted and my right hip and all of my toes started to really hurt. The walk back to my apartment was pretty pathetic and wobbly but I was so happy to have finished that it didn’t even matter. I also has a first today… I have ran 10 miles once before on my own and I stopped 3 or 4 times, BUT on this run I didn’t stop once! I was so proud of myself.

Fri Jan 11 Easy Run Dist: 2 Mi @9:30 & Abs – COMPLETE
Sat Jan 12 Rest / XT
Sun Jan 13 Long Run Dist: 10 Mi @9:32 – COMPLETE

Holy work outs this week! After the run today I came home and cleaned up and headed straight to the kitchen. My roommate was hosting a brunch so the kitchen was already spoken for, I quickly made a smoothie and got in and out in a flash. My smoothie contained: 1 egg, 1 cup unsweetened vanilla almond milk, a large handful of spinach, spoonful of unsweetened dark chocolate cocoa powder, spoonful of sweetener, one large banana, and lots of ice. Blend well and enjoy! IMG_4485I headed over to the boy’s boss’s house to watch some football and eat some yummy noms for the after. He served up shrimp cocktails and a smoked brisket. There was lots of other stuff but I stuck to the meats! It was delicious and I am really jealous that he has a smoker. As a bonus – I got some home smoked fresh bacon, whatttt!!! Best party favor ever. We are going to save it for the weekend and cook it all up, I can not wait.

Okay now to the slow cooker!! Julie @ PBFingers is doing a little crock pot challenge (make 10 new crock pot recipes by the end of February) and I figured it was as good of an excuse as any to use the crock pot!

Tex Mex Chicken & Vegetables

1 box frozen broccoli spears
1 can fire roasted tomato salsa
1 can fire roasted tomatoes with garlic
1 medium yellow summer squash
1 medium green zucchini squash
1 large bunch of cremini mushrooms
1 yellow onion
1 sweet potato
3 carrots
2 lbs chicken breast, cleaned
1 chili text mex seasoning packet
2 boullion cubes
3/4 can of water (use tomato can)
smoked paprika
garlic salt
IMG_4479(I did not end up using the white mushrooms in this picture) Wash all the vegetables and chop into equal sized pieces, cut all the fat off of the chicken breasts, and cut into 4 pieces each. Add everything to the crock pot, mix, and place on low. For the garlic salt and smoked paprika do about 4 or 5 good shakes into the pot. At the half way mark mix to make sure everything is nice and blended. When the 8 hours is up you will have about 10 cups of amazing chicken and vegetable goodness. I used 2 forks and shredded all the chicken while it was still in the crock pot.IMG_4480 IMG_4486 IMG_4487When I got home to take this off the heat I wasn’t hungry because of all the brisket I had eaten. I definitely had a taste though and this was amazing!! Definitely give it a go!

    • I am absolutely obsessed with my crock pot. I saw that PBfingers was doing the little crock pot thing and figured I’d add my 2 cents! I use it weekly for the most part! It is a great way to batch cook lunches for the week, plus I throw fried eggs on EVERYTHING so it’s good for breakfast too : )

  4. I tried a crockpot meal, and it failed miserably! … Still ate it because I was hungry though! lol

  8. Congrats on your run! I have to start using our crock pot. This weekend we had our first Paleo grocery shopping trip which was super exciting and we made muffins. Whee! Oh, and we cleaned. Not whee.
