Chocolate & Walnut Paleo Cookie Success

While my bread making skills may not be awesome I can bake a mean cookie. I didn’t even have to whip out the KitchenAid mixer for this recipe. Manged it all by myself! I started with a recipe from RunningToTheKitchen and changed it based on my taste buds / what I had on hand and wanted to use. Click the link to see the original version, here is mine! This made 12 cookies.IMG_3330[1]

– 1 cup almond meal
– 1/8 + another pinch teaspoon salt
– 1/8 tsp baking soda
– 3 tbsp melted coconut oil
– 1/2 of a medium banana, mashed
– 1 tsp vanilla extract
– 1 tbsp almond milk
– hefty 1/4 cup chopped dark chocolate chips
– handful of chopped walnuts, courtesy of my grandpa’s walnut tree and my lovely mother for cracking them for me!

1. Preheat oven to 350 degrees and line a baking sheet with parchment paper, silpat, or in my case tin foil.
2. Combine dry ingredients in a medium bowl.
3. Whisk together wet ingredients in a small bowl.
4. Add wet to dry and mix together.
5. Measure a tbsp and roll in hands into a ball, place on pan and gently press down in the middle to make a semi donut looking shape.
6. Bake for 10-11 minutes until bottoms just start to turn brown.
7. Remove from oven, remove tin foil from pan so the cookies can cool, they will be really soft.IMG_3331[1]

I LOVE frozen cookies and its the only way I eat any cookie I make so I tossed them in the freezer. This was all before soccer last night so I can’t wait to get home from work today to try one that is totally hard! They were super yummy warm too! On a side note, I haven’t really gorged out on any sweet in a while, up until last night. I made the bread first and then the cookies, which means the bag of chocolate chips was sitting on the counter. FAIL. I probably ate about half a cups worth as I was baking. At first all was happy hunky dory but then my stomach starting getting super mean and I proceeded to have a yucky belly until this morning : ( I take this as a good sign though, my body likes that I don’t feed it sugar any more! There are only one or two chips in each cookie so overall very healthy and a perfect Paleo treat! I wouldn’t recommend eating the whole batch at once though. Throw them in the freezer, they will last longer, out of sight out of mind. If you do this let me know what you think of frozen cookies, I couldn’t imagine life with out them.While we are on the food porn topic I will share a lovely picture of my dinner.   1. ahhh, now you are really making me want to try all these paleo recipes!! they sound and look amazing!!! YUMMO! I probably would do the same as you and eat a bunch of the dough… my stomach would probably hate me as well, but I know that it is usually worth it!

  2. MMMM that looks super good. I’ve been on the fence about converting to complete paleo and I’ve found it has really helped me and my diabetic flaireups but I’ve never taken the plunge and gone completely.

    • I am by no means full paleo! I still get jazzed when I go a whole day. I also will probably never be. I’m a sucker for cheese boards and crusty bread every once in a while and that will never stop. Find what works for you and go for it, no need to make rules!

  7. These cookies are awesome!! Just made them tonight and thy were delicious! I put them in the freezer before eating them and they were exactly the kind of cookie i was looking for! My husband was so excited to have a cookie that didn’t taste like the normal coconut paleo dessert! Thanks!!
