I am visiting my parents for the weekend which means a beautiful kitchen to cook in:

So this morning after a delicious omelet I decided it was time for some seasonal granola.

1 egg, 1/2 cup egg beaters, red onion, turkey, garden fresh tomatoes, lots of smoked paprika, some garlic, and sante fe salsa!
On to the granola… I got the idea for this recipe from PB Fingers. I added some extra goodies though and it turned out fabulous! Pumpkin Granola Ingredients: 1 cup old fashioned oats 1/2 teaspoon fresh ground cinnamon 3 tablespoons pumpkin 2 and a little bit tablespoons honey Handful of toasted pecans 1/2 an apple chopped up Handful of coconut 1 tablespoon canola oil Directions: Preheat oven to 350 degrees Combine all ingredients in a bowl and stir until oats are no longer dry Spread out granola on a cookie sheet sprayed with cooking spray Bake for 20 minutes, flipping halfway through Check at the 15 minute mark, ovens will vary! Allow to cool until granola is crunchy
