Chicken & Turkey Roll Ups

While I haven’t been posting recipes lately, it doesn’t mean that I haven’t been cooking! So let’s get cooking!!
Here is a recipe done two ways. Ingredients for round one of the roll ups includes:

Lots of ground turkey
Goat cheese
Salt and pepper!

Flatten out the turkey and season with salt and pepper. layer on the arugula and and goat cheese and cut up into strips. The amount of turkey we had worked out to four roll ups. Once all your goodies are in the turkey roll those babies up and throw then in a saute pan over medium / high heat for 2 minutes a side. Pop in a 425 degree over for 10-12 minutes until the juices run clear. This was served up with some salt potatoes and broccoli.

The last picture is of what left overs look like! Arugula and goat cheese salad with a roll up!



Using the same idea but with chicken… For chicken pound it out really flat, fill up, stick with a tooth pick and do the same as above! This was stuffed with just provolone cheese. For the veggies on the side I sautéed zucchini, bell pepper, and garden fresh tomatoes with evoo and salt and pepper. To top it off was a little parmesan cheese!!


This is a fun idea to play with, there are endless amounts of mix and match combos of meat, veggies, cheese, and spices!
