This was my first attempt at making stir fry rice and it came out pretty darn good!
Ingredients:
1 or 2 eggs (I apologize I can’t remember)
1/4 cup peas
1/4 black eyed peas
1/4 cup (dry) Wegman’s Mountain Red Blend Rice
Olive Oil
Salt
Pepper
Cook your rice according to package directions! To get going I beat the egg(s) and tossed them in a non stick pan. I flipped once and removed from the heat and cut up into little pieces.
Next up – throw your peas and beans (or whatever other veggies you have in the house – I was low), salt and pepper the veggies. Depending on the veggies you are using this will either be a quick warm up or a full on cook. Mine was a warm up because everything was left over from other meals!
Add the egg and rice into your sauté pan with the vegetables. If you happen to have any stock laying around I would suggest putting a little in (1/4 cup?) just to keep things from getting dry!
Yum yum – if you follow many of my recipes you will know I am not a pasta or rice person but this was pretty good! I was just doing a fridge clean out and needed something to bulk up the meal and this rice is really good as far as rice goes!

It tastes even better if you use leftover rice! And toss in a bit of sesame oil, soy sauce and/or fish sauce… yum.

My husband I make fried rice quite often… Amelia is right. Adding some soy and a tiny bit of sesame oil adds a lot of flavor. I also just throw the egg in the pan with the rest of the veggies (after pushing them to the side slightly) so they cook into everything else a little. I also use vegetable/canola oil b/c olive oil can be too overpowering with that sort of dish. Looks yummy!
