This is only my second attempt at cooking tofu and I think it came out pretty darn good! Hope you enjoy!
Ingredients:
1/2 bell pepper
1/4 small red onion
1/2 cup cubed extra firm tofu
3 small mushrooms
Apple Jalapeno Glaze
Dash of oil
Salt & Pepper
Couscous
I used whole wheat couscous and just followed the directions on the box. Bring to boil 1 1/4 cups of water, once boiling salt and stir in quickly 1 cup of couscous. Remove from heat, cover and let sit for 5 minutes.
Fill 1/2 cup measuring cup with tofu, squeeze dry with a paper towel first! Add in the flavoring you want the tofu to take on and let it hang out for a bit. For this dish I did the apple jalapeno glaze. Meanwhile, in a medium non stick frying pan add a smidge of cooking oil, whatever your heart desires. Add in chopped pepper, onion and mushrooms. Chop them so they are about the same size so everything cooks at the same speed. I normally do my onions a bit smaller because I like they cooked more.
Once every body in the pan starts to get nice and brown throw in your tofu! Make sure to get all of the flavor goodness out of the measuring cup or whatever bowl you were using for marinating purposes.
Let this cook for a few minutes until the tofu begins to have some brown edges.Once its done load up your plate with a cup of the cooked couscous. If you made the proportions I mentioned earlier you will have 3 cups + of cooked couscous at this point. Pile on the stir fry in the center and you have a delicious, quick, healthy and VEGAN dinner!!
