Day 2 – No Meat


Day two of no meat was wonderful. Breakfast consisted of 2 eggs, 1 piece of Arnold Healthfull Nutty Grain (really good) and some fruit. I was all over the place yesterday over the afternoon so I only had half a PB & J for lunch, not very fun veg right? So for dinner I decided to make a beautiful salad.

The base of this was spinach, next layered on was 1/4 cup of cold Lundberg Rice and a 1/4 cup great northern beans. Now while I was layering I had in a sauté 5 white mushrooms, quartered, and 5 stalks of asparagus halved. They were cooking in a little bit of EVOO, salt, pepper and garlic powder.

For the dressing I used the delicious asparagus and yogurt puree that I made earlier in the week. This salad was quick, delicious, healthy and loaded with protein and fiber. Excellent!

Gym news – realizing I need to stop being a baby and start running in the heat I went for a quick 3 mile before lifting. My Tough Mudder buddy and I were very pleased to find that doing assisted pull ups we were able to drop the weight which was very awesome! We still need about 50 – 75 lbs of help but that is way better than the 100 that we started on! So kudos for getting stronger. We just found out though that  one of the mystery obstacles is ringed monkey bars. WHO DOES THAT!! We were scurred enough of the regular monkey bars but nooo gotta make it even harder. Thanks Tough Mudder, thanks.

  3. Yay for no meat!! Cutting it out here and there is awesome! I hate running in the heat ohh my gosh..HATE!
