What to do when you run out of eggs to make a breakfast of champions? Dig out the oatmeal and see what you can come up with. What I came up with was pretty darn good.
Bring 1 cup milk (soy, regular or water) to a boil, mix in 1/2 cup oatmeal, 1/2-1 scoop of vanilla protein powder, splash of vanilla extract & pumpkin pie spice. Which is just cinnamon nutmeg and some other yum-ness.
Don’t use a wisk if you are using a non stick like I am. I immediately realized this and switched to a wooden spoon. Bad Megan.
Cook over medium-ish heat for 5-10 minutes – until its the consistency you want.

Now next up to pair with my oatmeal. I used some of the banana bread that I made yesterday and this fabulous jam.
